Sometimes you want to have open meetings that involve more than just your concom, or that are completely public. For instance, you may want to do this to brainstorm ideas for programming or guests, or for the Post-Mortem in which you review what did and didn't go well with the last convention.
Keep in mind that open meetings are a good opportunity to recruit new people into the process and the committee. Try to be welcoming and patient with questions, though you may want to answer some in greater length later if you feel someone is derailing your meeting.
